Recipe: Coconut Almond Chocolate Chip Granola

I am a chronic oversleeper.

There. I admitted it. And admitting is the first step, right?

Because of my terrible oversleeping habit, I am often totally chaotic in the morning, which leads to eating weird things like a handful of cheese-its & a mug full of tepid water on my way out the door for breakfast.

When I started this blog, one of things I promised myself was that I was going to work on my time management skills & I also was going to *try* and get off the hot mess express train, which brings me to this recipe. I’ve learned that the only way I’m going to have breakfast is if I prep ahead of time. This granola is perfect for breakfast on the go. I make a big batch over the weekend & I have breakfast for at least the next week, sometimes more depending on if I could stop myself from eating it for a snack. It’s that good!

This granola is loaded with shredded coconut, brown sugar, coconut oil, honey, almonds and chocolate chips. It has tons of coconut flavor and big clusters with the perfect amount of sweetness. It also smells like cookies when it bakes-which is just an added bonus for your senses.


The granola is packed  with coconut flavor thanks to the coconut oil *and* the shredded coconut. If you have never tried coconut oil, you’ve gotta try it. It’s becoming one of my favorite things to cook with! The brown sugar, coconut oil, and honey are melted in the microwave to make it easier to coat the oats.


This recipe is incredible easy to make. Just 6 ingredients & 5 minutes of prep time. To make the granola, start by melting the coconut oil and honey in the microwave for 15-30 seconds. Toss with the rest of the ingredients and place on a baking sheet lined with a parchment paper. Bake for 30-35 minutes (depending on your oven) or until golden brown and allow the granola to cool. The granola with get crunchier as it cools. (It tends to be sort of soft when it first comes out of the oven.) Toss cooled granola with chocolate chips.

The granola keeps for up to two weeks stored in an airtight container, but if you’re anything like me–it won’t last that long! I love to eat mine with milk like cereal, my sister prefers to put hers overtop yogurt, the options are endless, so just find what suits you!
